Homemade Raspberry Tart

Ingredients:


- 2 egg yolks


- 250ml milk


- 50g sugar


- 1 vanilla pod


- Fresh raspberries


Procedures:


1. Heat the milk and sugar in a saucepan. Split the vanilla pod in half, scrape out the tiny vanilla seeds, and add them to the milk. Boil the rest of the vanilla pod in the milk to enhance the aroma.


2. In a separate bowl, beat the egg yolks with sifted flour and vanilla sugar until well blended. Add about 1/3 to 1/2 of the warm milk to the egg mixture and beat until smooth and creamy. This step is crucial to achieve a silky sauce.


3. Once the remaining milk in the saucepan comes to a boil, pour in the milk mixture of flour, eggs, and vanilla sugar. Stir with a whisk while heating the saucepan until bubbles form, and the flour is completely incorporated, creating a luscious vanilla sauce.


4. For the tart crust, combine wheat flour, butter, and salt to form the base dough. Alternatively, you can use vanilla cookies, butter, and salt for a delightful crunch.


5. Roll out the pastry dough and place it into the tart mold. Press firmly with a fork to create small holes to prevent over-expansion during baking. Cover with baking paper and weigh it down with soybeans. Bake at 200 degrees Celsius for 15 minutes.


6. Once the crust is ready, remove it from the oven. Fill the tart with the prepared vanilla sauce and then arrange fresh raspberries around the edge. Lightly dust the tart with powdered sugar and continue to arrange the raspberries in the center without the powdered sugar.


7. If desired, you can also add other raspberry-friendly fruits like blackberries for extra flavor.
